Customization of food products has increased substantially in recent years while the desire for healthiness and an emphasis on understanding and providing calorie information continues to dynamically change the landscape of restaurant retail. The authors report four studies demonstrating that different customization routes (i.e., rejecting alternatives from a full product offering versus adding alternatives to a basic product offering) lead to systematic, but predictable, differences in consumers’ estimations of calories. In particular, this research finds that a rejection (vs. selection) customization process leads consumers to persistently estimate lower calories in the final product, which then improves evaluations of the retailer and leads to unhealthier food choices. These findings occur when consumers estimate calories of the exact same final product using the different paths to customization as well as when they create their own customized final product, while accounting for differences in the quantity and type of ingredients selected, suggesting a very general difference in estimations. This research has important implications for consumers who want to manage their weight and for firms that need to manage consumers’ health perceptions. 相似文献

This study investigates the influence of related party transactions (RPTs) on firm value. Further, it examines whether a firm’s corporate social responsibility (CSR) reporting reflects its corporate values and ethical concerns, therefore mitigating the value-destroying effects of RPTs. Based on 274 observations from publicly listed firms in Indonesia, our results show that RPTs (i.e., related party sales) are negatively related to firm value. Further, we find that in the presence of better CSR reporting, the relationship between RPTs and firm value becomes more positive. This is in line with the view that CSR reporting, which reflects firms’ ethical concerns, may serve as a mechanism against managers’ opportunism. However, we find that related party payables have a positive relationship with firm value. Further investigation reveals that, although certain RPTs show a short-term, value-enhancing effect, these transactions seem to result in subsequent tunneling activities, suggesting managerial opportunism in the long term. 相似文献

This study examines sustainability implementation in restaurants by theorizing and testing a comprehensive model of antecedents and effects. It represents positive and negative pressures toward sustainability respectively by entrepreneurs’ attitude and barriers to sustainability, while hypothesizing that customer satisfaction and competitiveness mediate effects of these practices on firm performance. Covariance-based structural equation modeling is used to analyze survey data on 334 restaurants in North Italy. Results show that sustainability attitude exerts pressure toward sustainability, while barriers in terms of costs, fear of regulation or skepticism about benefits have negative, but lower, effects. Sustainability implementation positively contributes to firm performance, but only via two intermediate measures of business success: competitiveness and customer satisfaction. The study fills a gap in the literature by presenting a whole construct of sustainability, by testing two mediating effects not yet hypothesized and by highlighting in the same model the role of factors enabling and deterring sustainability. 相似文献

The reputation of firms for being environmentally friendly and socially responsible is a key purchase driver for sustainable products. However, the commitment of firms to sustainability varies – some firms are founded on strong environmental and social principles; other more traditional firms are built on strong product/brand focus and are not known for sustainability. In response to market trends, many traditional firms are introducing sustainable products to their portfolios. We argue that the firm’s sustainability reputation (FSR) will influence consumer purchase with respect to equally sustainable products from different firms. Two choice studies demonstrate that FSR favors sustainable product choice when the consumer decides between equally sustainable products. However, FSR affects the choice only for sustainable products and not regular products and does so only for consumers that construe sustainability at a high (abstract) level. Retailers should pay attention to the role that FSR plays in consumer response when they select sustainable products to sell. 相似文献

This paper investigates the differential impact of positive and negative excessive managerial entrenchment on the CEO turnover-performance sensitivity, CEO compensation, and firm performance. We measure the degree of managerial entrenchment using the E-index introduced by Bebchuk et al. (2009). Our findings suggest that an increase in excess CEO entrenchment reduces the likelihood of CEO turnover due to poor performance. We also show a positive association between excessive entrenchment and CEO compensation as managers gain more power and authority when they are entrenched. On the other hand, excess CEO entrenchment has an inverse correlation with firm performance and firm value. Overall, we propose that excessive managerial entrenchment has a converse impact on board monitoring and shareholders’ welfare. 相似文献

The context to be addressed is the digitalization of industry and industrial processes. Digitalization brings enhanced customer relationships and value‐chain integration, which are effective instruments to meet increasing competition and slimmer margins for productivity and profitability. Digitalization also brings more pronounced requirements for effective planning, problem solving and decision making in an increasingly complex and fast‐changing environment. Decision analytics will meet the challenges from the growing global competition that major industrial corporations face and will help solve the problems of big data/fast data that digitalization is generating as a by‐product. A mantra is appearing in business magazines – that powerful, intelligent systems will be effective tools for the digitalization of industrial processes – but much less attention appears to be paid to the fact that users need advanced knowledge and skills to benefit from the intelligent systems. First, an effective transfer of knowledge from developers, experts and researchers to users (including management) will be needed; second, the daily use and operations of the systems need to be supported, as automated, intelligent industrial systems are complex to operate. We look at this transfer as knowledge mobilization and will work out how the mobilization can be supported with coaching; this coaching needs to be digital, as human coaches are both scarce and too expensive to employ in large numbers. 相似文献

Research Summary : How can strategic decision makers overcome inertia when dealing with change? In this article we argue that cognitive flexibility (i.e., the ability to match the type of cognitive processing with the type of problem at hand) enables decision makers to achieve significantly higher decision‐making performance. We show that superior decision‐making performance is associated with using semiautomatic Type 1 cognitive processes when faced with well‐structured problems, and more deliberative Type 2 processes when faced with ill‐structured problems. Our findings shed light on the individual‐level mechanism behind organizational adaptation and complement recent work on strategic inertia. In addition, our findings extend management studies that have stressed the relevance of cognitive flexibility for responding to the demands of increasingly open, flexible, and rapidly changing organizations. Managerial Summary : Humans are creatures of habits. We tend to prefer known courses of action over new ones. In many cases, habits are good. However, when things change in unpredictable ways, the past may not be good guidance for the future. We argue that “cognitive flexibility”—the ability of understanding when to rely on habits vs. when to explore new courses of action—enables managers to switch from a “fast” decision mode, based on habits, to a “slow,” more deliberate decision mode that facilitates the exploration of new courses of action. Managers high in cognitive flexibility reflect on the situation at hand, recognize and value diversity in viewpoints, and integrate such diversity in their own decision processes. Do children overestimate their engagement in parental purchase decisions? A systematic analysis of the articles enabled us to create a database of 149 cases where child and parent perceptions of children's engagement in parental purchase decisions were measured. The findings proved that there is congruence between children's and parents' perception of a child's engagement in most cases. Children's overestimation of their engagement in a parental decision to purchase products is likely the exception rather than the rule. The cases characterized as overestimations are related to product category and type of measured domain. (Children tend to overestimate their engagement more when the measures track participation or influence rather than decision independence.) 相似文献

ABSTRACTThis study assesses the importance, performance, and the interrelationships of key destination attributes for marketing managers to prioritize resource allocation. A three-dimensional analysis of importance–performance–impact-analysis (IPIA) factors, based upon a survey sample of 275 Chinese tourists to Britain and an expert panel interview with 10 destination marketing managers is presented. Data analysis was based upon a mix of multi-criteria decision-making methodologies, the Decision-Making Trial and Evaluation Laboratory (DEMATEL) method and the Analytic Network Process (ANP) method. This article has the aim of presenting the basis for a new, clearer classification of restaurant attributes. The research followed an interpretive approach with a systematic review of the literature, compared and contrasted with the findings of six focus group interviews. A new model was devised with seven categories of restaurant attributes. This article presents a model that needs to be tested. Also, follow-up articles with more detail about the attributes under each category will be presented.
